The Best Cocktails for Summer 2020

I’m usually a major wino, but now that it’s summer and heating up outside, a cocktail is SO much more refreshing!  I’ve been trying out a few different recipes in the last month and here are some of my favorites so far!  Enjoy 🙂

Frozen Sangria Slush

I love a classic sangria, so I thought I would try this recipe out – was not disappointed!  I found this recipe at DelishKnowledge.com.  This is perfect for a sweltering hot summer day.  This is also super easy to make, which makes it that much better.  I didn’t actually add any brandy to my recipe because I’m a light-weight, but you are welcome to!

  • 1 bottle of red or white wine (I used red)
  • 3 cups of frozen Berries (strawberries, rasberries, blueberries, etc.)
  • 1 cup of orange juice
  • 4 ounces of brandy (optional)

Combine all in a jug and serve!

Blueberry Mojito

This is probably one of the prettiest drinks I’ve ever made!  Oh and it’s delicious :).  It’s a great twist on a mojito for summer.    I discovered this cocktail at BBC Good Food blog.

  • 1/2 cup blueberries
  • 3 lemons, chopped
  • 2 tbsp of sugar
  • 350ml of white rum
  • 600ml of sparkling water
  • 2 mint leaves for garnish

Muddle the blueberries, lemons, and sugar in a jug.  Add the mint leaves.  Pour in the rum and sparkling water.  Serve with ice!

Pineapple Coconut Cooler

This cocktail will make you feel like you are in a tropical paradise!  It’s super refreshing and perfect for a day around the pool.  I found this delicious recipe on BeautifulEatsandThings.com.

  • 2 cups of chopped pineapple
  • 1/4 cup of coconut water
  • 2 tbsp of coconut syrup (like Torani)
  • 1 tbsp of vanilla syrup
  • 2.5 oz of white rum
  • 1/2 cup of ice

Blend all the ingredients except for the rum.  Add the rum in once everything is blended.  Pour over ice.

Champagne Punch

This is the perfect drink at brunch!  Swap out the usual mimosa for this citrus-y twist!  It’s also super easy and quick to whip up!  I found this recipe on WellPlated.com.  

  • 1 bottle of champagne.
  • 1/2 cup vodka
  • 1 cup of pomegranate juice
  • 1/4 cup of Grand Marnier or similar liqueur.
  • 1 orange
  • 1 lemon
  • 4 cups ginger ale
  • 2 cups of raspberries

Combine all ingredients in a pitcher and chill.  Serves about seven people.

Strawberry Moscow Mule

This is an awesome twist on the classic mule!  I came across this cocktail at TheRoastedRoot.com.  It’s a super cute blog, I recommend it for other recipes!  If you like mules, this is the perfect summer cocktail for you!  It’s a bit more work than the others, but totally worth it!

Strawberry Syrup:

  • 4 cups of strawberries
  • 3 tbsps of water
  • 1/3 cup maple syrup
  • 1 tbsp lemon juice
  • 1/2 tbsp of vanilla extract

One Cocktail

  • 2 ounces of vodka
  • 1/2 ounce of lime juice or lemon
  • 4 ounces of ginger beer
  • 2 ounces of the strawberry syrup
  • mint leaves (for garnish)

Heat the strawberries, water, maple syrup, lemon juice, and vanilla extract in a saucepan.  Cover and bring to a boil.  Once the strawberries soften up, mash them up and reduce heat to a simmer for 10 minutes.  Let it cool off and then pour through a fine strainer and discard the pulp.  In a cocktail shaker, combine all ingredients for one cocktail and add ice.  Shake well and serve in a those gorgeous copper mugs.
